Ingredients for 1 servings:

  • 500 ml milk
  • 1 tsp, heaped salt
  • pepper
  • nutmeg
  • 125 g butter
  • 250 g flour
  • 6 eggs
  • 125 g cheese (Emmental, Gouda or similar), diced or grated
  • 1 pinch of baking powder

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cheese puffs

Preheat oven. Bring the milk, salt, pepper, nutmeg, and butter to a boil. It’s best to use a tall, large saucepan for this. Then add all the flour at once and stir constantly until it forms a ball (remove the pan from the heat if necessary to prevent it from burning). Now beat in the eggs, one at a time. Then stir in the cheese and finally add the baking powder. Line a baking sheet with baking paper and place small heaps of the mixture on top using 2 teaspoons. Bake at 200°C for about 25 minutes.
