Parmesan chicken strips

Ingredients for 4 servings:

  • 4 chicken breast fillets
  • 75 g breadcrumbs
  • 40 g Parmesan, grated
  • some parsley, finely chopped
  • 2 eggs
  • 50 g butter, melted
  • salt and pepper

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 10 minutes

Golden Parmesan Chicken

Cut 4 to 5 long strips from each chicken breast fillet. Mix the breadcrumbs, Parmesan cheese, parsley, salt, and pepper in a bowl. Dip the chicken strips first in the beaten egg, then in the breadcrumb mixture. Place on a baking sheet lined with baking paper and let rest for about 30 minutes in the refrigerator, or outside in cold weather. Spread the melted butter over the chicken and bake in a preheated oven at 180°C for about 20 minutes, or until the chicken strips are golden brown. Serve with fried potatoes, or with garlic mayonnaise for dipping. It also makes a great finger food dish.
