Elderberry soup Kiel style

Ingredients for 4 servings:

  • 1 kg elderberries, stripped (elderberries)
  • 4 tbsp sugar
  • 3 apples, sour
  • 250 g plum(s), pitted
  • 125 ml milk
  • 1 tbsp butter
  • Salt
  • 60 g flour
  • 1 egg(s)

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Slowly bring the elderberries to a boil with 1/8 liter of water. Stir in the sugar and cook for about 10 minutes, then pass through a sieve into a second pot, squeezing the fruit well in the sieve with a spoon. Heat the juice. Peel the apples and cut into thin slices, then add to the juice and let them simmer until soft. Add the plums to the soup a few minutes after the apple pieces and let them simmer. Season the soup to taste and add a little more sugar if desired. To make the dumplings, bring the milk to a boil with the butter and a little salt, stir in the flour until a dumpling forms, let it cool slightly, and then stir in the egg. Use two teaspoons to scoop out small dumplings from the dough and let them simmer in the soup until cooked.
