Chocolate mousse

Ingredients for 4 servings:

  • 125 g dark chocolate
  • 60 g butter
  • 3 eggs
  • 3 tbsp brandy or cognac
  • 200 g whipped cream
  • 1 tbsp cocoa powder
  • chocolate flakes
  • powdered sugar

Instructions

Working time approx. 40 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 40 minutes

Break the chocolate into pieces and place it in a bowl with the butter. Melt it in a hot water bath, stirring occasionally. Separate the eggs. Gradually stir the egg yolks, brandy, and powdered sugar into the chocolate cream until the mixture falls heavily from the spoon. Beat the egg whites until stiff peaks form, then whisk 1/3 of the egg whites into the chocolate cream. Fold in the remaining egg whites with a spatula. Transfer the cream to a bowl and chill for about 2 hours or overnight. Whip the cream until stiff peaks form. Fold the top edge of a piping bag under and fill with the cream. Decorate the cream with dots of cream and dust with cocoa powder. Garnish with chocolate leaves.
