Broccoli salad

Ingredients for 6 servings:

  • 500 g broccoli, diced (stems and florets)
  • 12 slice(s) Bacon, crispy fried and crumbled
  • 150 g sunflower seeds, roasted in a pan without fat
  • 125 g raisins
  • 1 small onion(s), red, finely chopped
  • 250 ml mayonnaise
  • 125 ml sugar
  • 2 tbsp vinegar (white wine vinegar or balsamic vinegar bianco)

My mother discovered this salad in a Canadian magazine a few years ago. It sounds strange, but it’s delicious!

Combine broccoli, bacon, sunflower seeds, raisins, and onion in a salad bowl. Stir together mayonnaise, sugar, and vinegar, pour over the salad before serving, and mix well. Notes: This is a North American recipe, as you can tell from the amount of sugar. I’ve given the original amounts here, but you can easily omit at least half the sugar; it’s a matter of taste. If you don’t like eating the broccoli raw, you can blanch it briefly. It should definitely still be crunchy, though. Instead of mayo, you can also use a light salad dressing or replace half (or more) with yogurt; this won’t affect the flavor. If vegetarians are sharing the dish, you can easily omit the bacon (or add it separately for meat-eaters). This salad is a hit at (barbecue) parties and is something different.
