Ingredients for 2 servings:

  • 2 freshly picked parasol mushrooms
  • 1 onion(s), red
  • 1 onion(s), white
  • e.g. ketchup
  • e.g. butter or cooking oil
  • e.g. soy sauce
  • 2 rolls (country rolls or burger buns)

The onions are sliced ​​into rings and then sautéed in a little butter or cooking oil (depending on taste) until softened. Then the mixture is deglazed with a little soy sauce and everything is set aside. The parasol mushrooms are cleaned with a kitchen towel and then seared in butter or cooking oil. Since they are poisonous when raw, I make sure they are cooked thoroughly and crispy. Finally, they are deglazed with a little soy sauce. The buns are toasted so they are slightly warm and then cut open. One side is spread with ketchup, the other with butter. The fried onions and then the mushrooms are placed on top. Finally, the buns are folded and served. Tip: I like to serve them with a fresh salad and, if desired, an avocado dip (made with avocado, lemon, garlic powder, salt, and pepper). Important: When picking mushrooms yourself, always remember to only pick ones you know! If you are unsure, it is better to have someone with experience take a look at them.
