Ribbon pasta in chanterelle cream

Ingredients for 4 servings:

  • 2 onions
  • 100 g bacon, streaky and smoked
  • 250 g chanterelles, fresh
  • 400 g tagliatelle, white
  • Salt and pepper, white
  • 1 tbsp oil
  • 375 ml vegetable broth
  • 2 tbsp crème fraîche
  • Paprika powder, sweet

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel and finely chop the onions. Dice the bacon. Trim the chanterelles. Heat the oil. Fry the bacon cubes and sauté the onions. Add the mushrooms and sauté. Deglaze with stock and bring to a boil. Stir in the crème fraîche. Season with salt, pepper, and paprika. Meanwhile, cook the tagliatelle according to the package instructions and drain. Serve with the sauce.
