Ingredients for 4 servings:

  • 1 kg minced pork
  • Bacon, cut into strips as needed
  • salt and pepper
  • chili pepper(s), finely chopped
  • 2 onions, finely chopped
  • Cheddar

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour

This delicious recipe comes from the BBQ PitBoys, whose videos can be seen on YouTube. Here is my personal and favorite variation. Season the minced meat with salt and pepper and knead it for a long time to activate the proteins in the meat and bind it together. Lay out the bacon in a 3 x 3 weave basket and press a handful of minced meat onto each one. Briefly sauté the onions and then mix with the chopped chilies. Add about a tablespoon of this mixture to the minced meat, add some cheese and fold the bacon over it; it should enclose the meatball like a mesh. Repeat this process until all the minced meat is used up. If you like, you can now brush the bombs with a marinade or BBQ sauce. Cook on the grill over indirect heat. Depending on the temperature of the grill, this will take 30 – 40 minutes. The bacon should be crispy and the minced meat should be completely cooked.
