Ingredients for 1 servings:

  • 2 spare ribs
  • 50 ml peanut oil
  • 110 ml coconut milk
  • 3 tbsp pineapple juice
  • ½ stalk lemongrass
  • 1 piece(s) ginger or 0.5 tsp ginger powder
  • ½ tbsp curry paste
  • 1 pinch of salt
  • 1 pinch(s) of pepper
  • 1 handful of basil
  • n. B. Honey

Instructions

Working time approx. 15 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 7 minutes; Total time approx. 2 hours 22 minutes

Perfect for grilling

Wash the meat. Peel the fresh ginger and finely chop it with the basil. Mix a marinade from peanut oil, coconut milk, lemongrass, pineapple juice, curry paste, basil, and ginger. Place the meat in the marinade and let it marinate in the refrigerator for at least two hours, or preferably overnight. Before grilling, remove the spare ribs from the marinade, drain well, season with salt and pepper, and grill for about 5-7 minutes on each side. If desired, brush the spare ribs thinly with honey on both sides shortly before the end of the cooking time.
