Sunflower brownies

Ingredients for 60 servings:

  • 125 g butter, room temperature
  • 175 g sugar
  • 3 eggs
  • 2 tbsp cocoa powder
  • 150 g flour
  • 50 g sunflower seeds
  • Butter for the baking tray

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 18 minutes; Total time approx. 43 minutes

Cream the room-temperature butter with the sugar until fluffy. Stir in the eggs one at a time, followed by the flour sifted with the cocoa powder, a tablespoon at a time. Finally, roughly chop the sunflower seeds and fold them in. Line the baking tray with baking paper, leaving a seam about 12 cm from one of the short sides of the tray (see illustration). Spread the brownie mixture onto the paper-lined part of the tray. Bake the brownie mixture in a preheated oven at 160°C (convection oven: gas mark 2) for about 18 minutes. While still hot, cut into strips lengthwise, then cut each into 15 cubes. Store in an airtight container. Tip: Brush with chocolate coating and sprinkle with sunflower seeds, if desired.
