Cottage cheese pancakes with fruit

Ingredients for 4 servings:

  • 500 g cottage cheese
  • 6 eggs
  • 6 tbsp flour, well heaped
  • 250 g quark
  • 150 g sour cream
  • 2 packets of vanilla sugar
  • 1 lemon(s), peel
  • 500 g strawberries
  • 3 tbsp honey
  • 1 orange(s), juice
  • 500 g apricot(s)
  • some strawberries for garnishing
  • Salt
  • baking powder
  • oil

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Wash and hull the strawberries, cut into pieces, and puree with honey and orange juice. Strain the strawberry sauce through a sieve. For the cream, thoroughly mix the curd cheese with sour cream, vanilla sugar, and grated lemon zest. Separate the egg yolks and whites. Mix the cottage cheese with the egg yolks, flour, and a pinch each of baking powder and salt. Beat the egg whites until creamy and gently fold into the mixture. Bake the pancakes (put about 2 tablespoons of the mixture in the pan, spread a little, and bake until golden brown on both sides). Wash the apricots, remove the stones, and cut into thin slices. Wash and hull the strawberries for garnish, and cut them into equal-sized pieces. Spread the pancakes with the vanilla cream and garnish with the apricots and strawberries. Serve with the strawberry sauce.
