Ingredients for 3 servings:
- 1 chicken, approx. 1800 g, cut into 8 pieces
- ½ tsp oregano, dried
- ½ tsp thyme, dried
- ½ tsp basil, dried
- ½ tsp sage, dried
- ½ tsp paprika powder
- ½ tsp cayenne pepper
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp salt (onion salt)
- ½ tsp garlic powder
- ½ tsp marjoram, dried
- 125 ml milk
- 2 eggs
- 250 g flour
- ½ tsp paprika powder
- ½ tsp baking powder
- ½ tsp garlic powder
- 2 ½ tsp salt
- ½ tsp black pepper
- 700 g fat (frying fat)
Instructions
Working time approx. 35 minutes; Rest time approx. 4 hours; Cooking/baking time approx. 30 minutes; Total time approx. 5 hours 5 minutes
Rub the chicken pieces with the spice mixture and refrigerate for 3-4 hours, then remove and place on kitchen paper. Heat the frying oil in a deep fryer to 180 degrees Celsius. Mix the milk and eggs in a bowl. In another bowl, mix the flour, paprika, baking powder, garlic powder, salt, and pepper. Dip each piece in the milk mixture and then in the flour mixture. Then dip the pieces again in the milk mixture and then in the flour mixture. Place the breaded pieces on a plate. Then add half of the pieces to the deep fryer and fry for 15 minutes, turning the chicken pieces once. Remove the chicken pieces from the fryer and drain on kitchen paper, keep warm if necessary. Do the same with the second half. Serve. French fries or wedges go well with this.
