Spicy stew with pumpkin and chicken

Ingredients for 4 servings:

  • 500 g chicken fillet, cut into pieces
  • 2 tbsp oil
  • 2 onions, finely chopped
  • 4 cloves garlic, crushed or very finely chopped
  • 1 red bell pepper(s), diced
  • 1 green bell pepper(s), diced
  • 1 chili pepper(s), finely chopped
  • 2 tsp curry powder
  • 400 ml coconut milk
  • 750 g pumpkin flesh, diced
  • salt and pepper
  • Water

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Heat half the oil in a large pot and brown the diced chicken. Season the meat with salt and pepper, then remove it from the pot and keep warm. Heat the remaining oil. Sauté the onion, bell pepper, chili peppers, garlic, and pumpkin, and fry lightly. Add the curry powder and chicken, and stir in the coconut milk. Simmer for about 45 minutes. Add water and salt as needed. This stew goes perfectly with fresh bread or rice.
