Ingredients for 4 servings:

  • 300 g potatoes
  • 200 g apples
  • 300 g black pudding
  • 50 g butter
  • 100 g onion(s) or shallots

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Peel the potatoes and slice them thinly using a slicer. Cut the black pudding into finger-thick slices. Peel the onions or shallots and dice them into small cubes. Cut the apples into cubes approximately 1-2 cm thick. Arrange the potatoes in a ring on buttered baking paper (approx. 8 cm in diameter) and brush with melted butter. Place the black pudding slices in the center of the potato ring. Bake in a hot oven at approximately 180°C for approximately 15-20 minutes. In the meantime, fry the onions in a little butter in a pan. Sauté the apple cubes in butter in a hot pan until soft. Place the potato/black pudding ring on a plate and arrange the onion and apple pieces around it. Rhinelanders enjoy this with a “lecker Kölsch” (delicious Kölsch). Other connoisseurs may, of course, also enjoy a “lecker Kölsch” (delicious Kölsch).
