Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
moist sponge cake with crispy cinnamon crumbles, for 16 pieces
For the fruit topping, peel apples and cut into wedges, or pit and halve plums. The two fruits go very well together as they taste so good together. For the crumble, mix flour, sugar, and cinnamon in a small bowl, add melted butter, and use a fork or your fingers to crumble. Place the bowl in the refrigerator for a short time; the crumble will then become harder and more crumbly. For the batter, cream the softened butter with a mixer until creamy, add sugar and salt, and beat for 2 minutes until the mixture thickens and becomes lighter in color. Then beat in the eggs, one at a time, for 1 minute. Mix the flour with the baking powder and beat in briefly in two batches. Spread the batter into a greased springform pan and cover with the prepared fruit, tightly stratified to create a flake-like texture. Spread the crumble over the fruit. Bake the cake in a preheated oven at 180-185°C for 60 minutes. Topped with whipped cream, this cake is a real treat.
