Didi's basic recipe for Mutzenmandeln

Ingredients for 1 servings:

  • 325 g wheat flour
  • 1 ½ tsp baking powder
  • ½ bottle of rum flavoring
  • 3 m.-sized eggs
  • 113 g sugar
  • 113 g butter
  • Flour for working
  • 3 liters of vegetable oil
  • n. B. Icing sugar for dusting

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 8 minutes; Total time approx. 28 minutes

Mix the wheat flour with the baking powder. Cream the butter with the sugar until light and fluffy, then beat with the eggs until smooth. Using the dough hook on the mixer and continuously adding the flour mixture, knead the mixture into a smooth dough. Knead the dough vigorously with your hands, adding a little flour. Roll out the dough to about 1 cm. Cut out almonds using the Mutzen almond cutter. Heat the oil in a deep fryer or large saucepan to 175°C and fry the Mutzen almonds for 3-6 minutes, stirring constantly. Drain the fried Mutzen almonds on kitchen paper and roll them in powdered sugar while still hot. The dough is also ideal for making Mutzen leaves.
