Ingredients for 4 servings:
- 300 g pasta (Fleckerln)
- 1 m.-sized onion(s)
- 20 g butter
- 200 g ham (leg ham)
- 50 g butter
- 3 eggs
- 250 ml sour cream
- ½ bunch parsley
- Butter and breadcrumbs for the mold
- 120 g cheese, grated (Emmental)
- Butter, in flakes
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Boil the Speckerln in plenty of salted water until not too soft; empty into a sieve and rinse with cold water. Finely chop the onion and fry lightly in 20g butter. Finely chop the ham. Wash and finely chop the parsley. Grease a medium baking dish with butter and sprinkle with breadcrumbs. Beat 50g of softened butter until very fluffy. Gradually add the eggs, one at a time, and beat again until fluffy. Season to taste with salt and pepper and stir in the sour cream. Then fold in the Speckerln. Add the ham, parsley, and onion and mix everything well. Pour into the prepared dish and smooth the surface. Sprinkle with grated cheese and dot with butter flakes. Bake in a preheated oven at 200°C for about one hour; when the cheese has melted and is a nice color, remove the Speckerln from the oven. Portion the baked ham Speckerln into the dish and serve immediately while hot; Salad is served according to availability and of your choice.
