Ingredients for 4 servings:
- 500 g jacket potatoes
- 100 g onion(s)
- 100 g bacon, streaky, smoked
- 6 m.-sized eggs
- 4 tbsp milk
- 100 g bell pepper(s), green, cut into strips
- salt and pepper
- 2 tomatoes
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Slice the boiled potatoes and dice the bacon and onions. Whisk together the eggs and milk, season with salt and pepper. Slice the tomatoes. Heat a large pan with fat, fry the potatoes and bacon until crispy, then add the onions and pepper strips and fry for a few minutes. Pour the eggs into the pan and let them set without stirring (you can grill them if you like). Slide the eggs onto a plate and garnish with the tomato slices.
