Low-calorie Christmas Stollen

Ingredients for 1 servings:

  • 200 g raisins
  • Rum flavor
  • 250 ml low-fat milk
  • 1 cube of yeast, fresh
  • 400 g flour (wheat flour)
  • 1 tsp sugar
  • 1 egg(s)
  • 1 pinch of salt
  • 2 drops flavoring (bitter almond flavoring)
  • Sweetener, liquid
  • 70 g margarine (semi-skimmed)
  • 75 g almonds, chopped
  • 100 g candied lemon
  • powdered sugar

Instructions

Working time approx. 45 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 45 minutes

Wash the raisins, drain, drizzle with rum flavoring and a little water, and cover and let stand. Heat the milk, dissolve the yeast in it, stir in a little flour and sugar to form a pre-dough, and let it rise for about 20 minutes. Knead the pre-dough with the remaining flour, egg, and salt until smooth, seasoning with bitter almond flavoring and sweetener. Heat the margarine, knead into the dough with the almonds, candied lemon peel, and raisins, and let it rise for about 30 minutes. Divide the dough into 24 pieces, roll out, and fold over each other to form a typical Stollen shape. Place the Stollen on a baking sheet lined with baking paper, let rise for another 20 minutes, and bake in a preheated oven at 200°C for about 1 hour. Let cool and dust with powdered sugar.
