Ingredients for 4 servings:

  • 1 ½ kg potatoes, boiled
  • 500 g carrot(s), cooked
  • ½ liter milk / water, more as desired (warm)
  • Meat, poultry or fish leftovers
  • 2 m.-large gherkins
  • Vegetables, leftovers from the day before
  • ½ tsp salt
  • 1 pinch(s) of pepper
  • 4 eggs
  • Beetroot

Working time approx. 30 minutes; Total time approx. 30 minutes

Hamburger leftovers

Labskaus is a leftover dish from northern Germany. It’s tasty and healthy. Mash the boiled potatoes with milk and/or water. Alternatively, just use water. Add the cooked carrots. Mix the meat/fish with the mashed potatoes and heat gently in a pot. Add any leftover vegetables from the day before. Add salt and pepper. Fry the fried eggs and divide them among the servings. Garnish with beets and gherkins on each plate.
