Ingredients for 4 servings:
- 1 ½ kg potatoes, boiled
- 500 g carrot(s), cooked
- ½ liter milk / water, more as desired (warm)
- Meat, poultry or fish leftovers
- 2 m.-large gherkins
- Vegetables, leftovers from the day before
- ½ tsp salt
- 1 pinch(s) of pepper
- 4 eggs
- Beetroot

Hamburger leftovers
Labskaus is a leftover dish from northern Germany. It’s tasty and healthy. Mash the boiled potatoes with milk and/or water. Alternatively, just use water. Add the cooked carrots. Mix the meat/fish with the mashed potatoes and heat gently in a pot. Add any leftover vegetables from the day before. Add salt and pepper. Fry the fried eggs and divide them among the servings. Garnish with beets and gherkins on each plate.
