Latwerch or Latwerg

Latwerg or Latwerch refers to a jam that has been simmered for hours and thickened considerably. It can be made from rose hips, sloes, or plums. Pit the plums and grind them into a puree (using a meat grinder, food processor, or hand blender). Simmer the puree with a little water over moderate heat, stirring regularly. The plum jam is ready when the puree is dark and viscous and a spoon can stand upright in the puree without tipping over. While still hot, pour into screw-top jars, seal, and turn upside down.
