- 70 g wild rice
- 50 g coconut milk, e.g. low-fat
- 20 g honey or maple syrup
- 1 banana(s)
- 1 pinch of cinnamon
- 1 vanilla pod(s)
Instructions
Working time approx. 5 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 30 minutes; Total time approx. 12 hours 35 minutes
for breakfast or dessert
Cook the wild rice according to the package instructions. Soak it in water for 12 hours beforehand to reduce the cooking time. Once the rice is tender, drain the remaining water. Add the coconut milk to the rice. Chop the banana and stir it in. Now add the honey or maple syrup and spices to taste and bring to a brief simmer. This amount is enough for approximately one person for breakfast or makes 2-3 servings for dessert.
