Cauliflower patties with oat flakes and oat bran

Ingredients for 3 servings:

  • 260 g cauliflower
  • 1 egg(s), size M
  • ¼ tsp coriander powder
  • some nutmeg, freshly grated
  • ½ tsp sweet paprika powder
  • 35 g Parmesan, freshly grated
  • 25 g oat flakes
  • 15 g oat bran
  • 1 tbsp parsley leaves
  • ½ tsp salt
  • some pepper, from the mill
  • some breadcrumbs
  • Olive oil for frying

Instructions

Working time approx. 15 minutes; Rest time approx. 40 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 15 minutes

Divide the cauliflower into florets. Cook in a little salted water until al dente and let cool. Roughly chop the parsley leaves. Then place the cauliflower in a food processor and finely chop. Add all ingredients except the breadcrumbs and olive oil and mix thoroughly. Let stand at room temperature for 30-40 minutes to allow the oats and oat bran to swell. Season to taste and add salt and pepper if desired. Form the mixture into 6 patties and coat in breadcrumbs. Gently heat the olive oil in a pan and fry the patties over medium heat until golden brown. This takes about 5 minutes per side. I served it with some tzatziki, homemade BBQ sauce (https://www.chefkoch.de/rezepte/4216331681572923/BBQ-Sosse-auf-Vorrat.html), and tomatoes.
