Ingredients for 3 servings:
- 260 g cauliflower
- 1 egg(s), size M
- ¼ tsp coriander powder
- some nutmeg, freshly grated
- ½ tsp sweet paprika powder
- 35 g Parmesan, freshly grated
- 25 g oat flakes
- 15 g oat bran
- 1 tbsp parsley leaves
- ½ tsp salt
- some pepper, from the mill
- some breadcrumbs
- Olive oil for frying
Instructions
Working time approx. 15 minutes; Rest time approx. 40 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 15 minutes
Divide the cauliflower into florets. Cook in a little salted water until al dente and let cool. Roughly chop the parsley leaves. Then place the cauliflower in a food processor and finely chop. Add all ingredients except the breadcrumbs and olive oil and mix thoroughly. Let stand at room temperature for 30-40 minutes to allow the oats and oat bran to swell. Season to taste and add salt and pepper if desired. Form the mixture into 6 patties and coat in breadcrumbs. Gently heat the olive oil in a pan and fry the patties over medium heat until golden brown. This takes about 5 minutes per side.
