Vital salad with breaded mountain cheese

Ingredients for 1 servings:

  • 1 handful of red cabbage, sliced
  • 1 handful of Chinese cabbage, sliced
  • ½ cucumber(s), fresh and grated,
  • ½ carrot(s), cut into small cubes
  • 3 cocktail tomatoes, quartered
  • ½ onion(s), red, cut into small cubes
  • 1 tbsp sunflower seeds
  • 1 tsp, leveled salt
  • 1 tsp, levelled sugar, or other sweetener
  • 1 tsp balsamic vinegar, white
  • 1 tbsp oil, preferably cold-pressed grape seed oil
  • Chives or spring onions, cut into small rings
  • 100 g mountain cheese, cut into 4 pieces
  • 1 tbsp milk
  • 1 tbsp, leveled flour
  • 1 tbsp breadcrumbs
  • Oil for the pan

Working time approx. 20 minutes; Cooking/baking time approx. 4 minutes; Total time approx. 24 minutes

Combine all the vegetable ingredients and the sunflower seeds in a bowl, season lightly with salt and pepper, and season with balsamic vinegar. Mix well with the oil and sprinkle with chives. Dip the cheese sticks in milk, mix in the flour and breadcrumbs, and toss the sticks in the mixture. Heat briefly in a pan that is not too hot, rather than frying, as the cheese tends to harden slightly at high heat. Arrange the cheese on top of the salad.
