Marinated mushrooms

Ingredients for 6 servings:

  • 750 g mushrooms
  • 8 tbsp olive oil
  • 6 tbsp sherry vinegar
  • 2 cloves garlic, sliced
  • 1 sprig(s) rosemary
  • 1 sprig(s) sage
  • 1 pinch of salt
  • 1 pinch(s) of sugar
  • 1 pinch(s) pepper, freshly ground
  • ½ bunch flat-leaf parsley

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes

Clean the mushrooms and slice them thickly. Heat olive oil in a pan and fry the garlic slices and mushrooms until the resulting liquid has completely evaporated. Add the sherry vinegar. Add the picked herbs and bring to a boil. Season with salt, pepper, and sugar. Cool and let stand for at least 2 hours. Sprinkle with chopped parsley before serving.
