Cucumber salad with vinegar and oil

Ingredients for 4 servings:

  • 1 cucumber(s)
  • 3 tbsp herb vinegar
  • 5 tbsp vegetable oil
  • salt and pepper
  • Sugar
  • dill
  • Parsley

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 10 minutes

Side dish for fish

Peel the cucumber and slice it. Place it in a bowl and sprinkle with salt (not too little). Let it sit for about 30 minutes. Then drizzle with 5 tablespoons of oil and 3 tablespoons of vinegar. Season with pepper and sugar (to taste). Top with a little tap water. Stir in finely chopped parsley and dill. Let the salad sit for a short while. I usually prepare the cucumber salad to my liking, so I can’t give you exact quantities here. Just use it as a template and vary it to your own taste.
