Pork fillet with fried broccoli and pine nuts

Ingredients for 2 servings:

  • 300 g broccoli
  • 4 tbsp olive oil
  • 1 ½ tbsp pine nuts
  • 250 g pork fillet(s)
  • 2 sprigs rosemary
  • 2 tbsp butter
  • 2 tbsp crème fraîche
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash the broccoli and divide it into small florets. Heat 4 tablespoons of olive oil in a pan. Sauté the broccoli and pine nuts in it and season with salt and pepper. Wash the pork fillet, pat dry, and cut into medallions. Then lightly flatten and season well with salt and pepper on both sides. Finely chop the rosemary and generously coat the pork fillet in the rosemary. Melt the butter in another pan and fry the medallions on both sides. Finally, add the crème fraîche to the broccoli and toss to combine. Arrange the medallions and broccoli on plates and serve.
