Ingredients for 1 servings:

  • 80 g sunflower seeds
  • 120 ml water
  • 3 tbsp nutritional yeast
  • 1 dashes lemon juice
  • 1 pinch of salt

Working time approx. 5 minutes; Rest time approx. 5 minutes; Total time approx. 10 minutes

as a cheese or feta substitute

Soak the sunflower seeds in water for 5 minutes, then blend with the water until smooth. Add the nutritional yeast, salt, and lemon juice, if desired, and mix well. Add more water to taste and for consistency. Sunflower seed cheese is an excellent substitute for feta and cheese, for example, in pasta dishes or on pizza. It can also be used in dips or simply enjoyed on its own as a spread, for example, with sprouts, or sweetened with jam. It will keep in the refrigerator for 2-3 days.
