Ingredients for 2 servings:

  • 2 bell peppers, colored
  • 1 clove(s) garlic
  • 1 can coconut milk
  • 4 mushrooms
  • some olive oil
  • 2 tsp herbs de Provence
  • 3 tsp curry powder
  • 3 tbsp tomato paste
  • salt and pepper
  • Paprika powder
  • Cinnamon powder

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

simple yet delicious

First, dice the bell peppers, mushrooms, and garlic clove, fry them in a little olive oil, and add the Provençal herbs. Deglaze with the coconut milk and stir well. Add a little water, depending on the consistency of the milk, and bring to a boil. Then simmer for a while, seasoning with salt, pepper, paprika, a little cinnamon, and curry powder. Finally, stir in the tomato paste. Cook until tender and season again before serving. This dish tastes delicious with rice or pasta.
