Curry – Ketchup Special à la Bernd

Ingredients for 1 servings:

  • 3 tbsp curry powder
  • 1 tbsp oil
  • 1 tsp cayenne pepper, or dried chilies, more or less to taste, or a bit of both
  • 100 ml cola
  • 100 ml orange juice
  • 350 ml tomato ketchup, very good, best homemade
  • 2 tsp tomato paste
  • Salt
  • pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Gently sauté the curry powder in the oil. Be careful not to overheat it, or the curry powder will quickly become bitter. Add the cayenne pepper and/or chilies and mix well in a small saucepan. Now add the cola (careful, add slowly, as it will foam a little), bring to a gentle boil, and then add the orange juice. Continue to reduce, stirring constantly. Then slowly stir in the tomato ketchup and tomato paste. Mix everything thoroughly and simmer gently for another 2-3 minutes. Season to taste with salt, pepper, and perhaps a little more curry powder. If you like, you can add more chilies until the desired flavor/spicy combination is achieved. It tastes best when the fried sausage (if you’re making it a curry sausage) is sprinkled with a little curry and paprika powder before adding the curry ketchup. The ketchup also goes very well with anything grilled. Adding sugar isn’t necessary, as the cola and orange juice provide enough sweetness. It will keep in the refrigerator for about a week.
