Bruschetta with figs

Ingredients for 4 servings:

  • 1 baguette(s), approx. 500 g
  • 1 tbsp olive oil
  • 2 garlic cloves
  • 250 g fig(s), dried
  • 3 small onions, red
  • 2 small limes
  • 6 basil leaves
  • 1 tbsp balsamic cream, vegan
  • 1 pinch(s) of salt and pepper
  • 1 pinch(s) rosemary
  • 1 tbsp soy cream fraîche (crème fraîche alternative)

Working time approx. 20 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 25 minutes

Cut the baguette into about twelve equal-thickness slices. Pour olive oil into a cup, press in a clove of garlic, and spread it over the slices. Place the slices of bread on a baking sheet lined with baking paper. Roast in an oven preheated to 180°C (top/bottom heat) for about five minutes on the middle rack. Prepare a bowl. Cut the figs into eighths, dice the onions as small as possible, and add both to the bowl. Then press the remaining garlic clove, juice the limes, and thinly slice the basil. Add everything to the figs. Then add the tablespoon of oil and the balsamic vinegar. Season with salt, pepper, and rosemary and stir well. Then stir in the Creme Vega and season to taste. Remove the slices of bread from the oven and spread the mixture evenly over them. Serve immediately. It tastes best if you prepare the topping the day before and let it sit for a while.
