Ingredients for 4 servings:

  • 10 carrots
  • 4 stalk(s) celery or celeriac
  • 3 stalk(s) leeks
  • 4 tomatoes
  • 1 large onion(s)
  • 2 tbsp oil
  • 3 stalks of thyme
  • 2 bay leaves
  • 4 cloves
  • 1 tsp peppercorns
  • Salt
  • 2 liters of water

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

as a base for sauces and soups

Wash, trim, and finely chop the soup vegetables and tomatoes. Peel and halve the onion, then sauté it vigorously in a dry pan. Add the oil, vegetables, thyme, spices, and a good 2 liters of water. Bring to a boil and simmer over low heat for 1 hour. Once the cooking time is complete, strain the vegetable broth through a sieve and season with salt.
