Smokey's Spicy Cucumber Salad

Ingredients for 2 servings:

  • 1 cucumber(s)
  • ½ bunch parsley, flat, chopped
  • 8 half tomatoes, dried in oil
  • 2 tbsp sesame seeds, roasted without fat
  • some coriander leaves, if desired
  • 1 small chili pepper(s), finely chopped
  • 1 tsp mustard
  • 4 tbsp Balsamic vinegar bianco
  • 2 tbsp broth
  • 3 tbsp olive oil
  • 1 tsp pepper, green, dried, coarsely crushed
  • 2 tsp curry powder
  • Salt

Instructions

Working time approx. 10 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 30 minutes

SiS-compatible

Peel the cucumber into strips, halve lengthwise, and slice. Thinly slice the tomatoes and place them in a bowl with the cucumbers and parsley. For the dressing, mix all ingredients well. Be careful with the chili; add it to your own taste. Mix the cucumbers and dressing well. Let stand for 10-15 minutes, if possible. Fold in the sesame seeds, and if you like, sprinkle with some fresh coriander at the end.
