Tatar de boeuf – beef tartare

Ingredients for 2 servings:

  • 300 g beef fillet(s)
  • 2 egg yolks
  • 1 tbsp Dijon mustard
  • 1 tbsp Worcestershire sauce
  • 1 dashes Tabasco
  • e.g. salt and pepper
  • 1 m.-large shallot(s), finely diced
  • 4 gherkins, finely chopped
  • 1 tbsp capers (nonpareils)
  • 1 tbsp parsley, finely chopped
  • 2 tbsp olive oil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Finely dice the meat with a sharp knife and set aside. In a cold bowl, mix the egg yolk with mustard, Worcestershire sauce, Tabasco, salt, and pepper. Add the shallots, gherkins, capers, and chopped parsley and mix well again. Now add the meat and olive oil and mix everything well. Season to taste and serve with French fries, baguette, or brown bread.
