Ingredients for 2 servings:
- 2 slices of wholemeal bread
- 1 tbsp clarified butter or vegetable cream
- 160 g beef tartare
- 1 spring onion(s)
- 3 cherry tomatoes
- 1 pinch of garlic powder
- e.g. salt and pepper
- e.g. chili
- 1 dashes lemon juice
- 1 tbsp Worcestershire sauce
- 2 tbsp wild garlic oil, or olive oil
- 3 herring fillets
- 1 shallot(s)
- 3 tbsp tartar sauce
- 1 tbsp, picked dill, chopped
- 1 dashes lemon juice
- 1 pinch(s) of sugar
- 2 tbsp mustard, medium hot
- 1 cucumber(s)
Instructions
Working time approx. 20 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 35 minutes
A hearty little dish or even a starter
Cut out a serving ring from the wholemeal bread and toast it on both sides in a hot pan with fat. Transfer to kitchen paper and let cool. Finely dice the tomatoes, spring onions, and shallots, and thinly slice the green cucumber. Add the diced tomatoes and spring onion rings to the beef tartare, season with salt, pepper, chili, garlic powder, Worcestershire sauce, lemon juice, and oil, and marinate. Cut the herring fillets into small cubes, season with a little pepper, mix with the remoulade, diced shallots, dill, and lemon juice, and season to taste with sugar. Let everything rest for 5 minutes. Spread the toasted bread slices thinly with mustard. Place the serving ring on a plate. First, add the spreadable bread, then the meat, then the green cucumber, overlapping so that the meat is completely covered. Then add the fish and press down firmly. Decorate as desired and carefully peel off the ring.
