Pizza dough made from chia and flax seeds

Ingredients for 2 servings:

  • 140 ml water
  • 150 g flaxseed meal
  • 14 g chia seeds
  • 1 tsp salt
  • 1 pinch(s) of oregano

Instructions

Working time approx. 15 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 45 minutes

Soak the chia seeds in a bowl of warm water for 15 minutes, stirring occasionally. A jelly will form with a sticky consistency. Preheat the oven to 200°C fan/convection oven. Add the flaxseed, salt, and optional oregano to the chia jelly and stir well. Let it sit for 5 minutes. Place a sheet of baking paper on a flat surface and spoon the mixture onto it. Place the cling film over the top. Roll out the mixture evenly and thinly with a rolling pin until about 3/4 of the baking paper is covered. Place the baking paper with the rolled out dough on a baking tray in the preheated oven and bake for 6 minutes. Remove the baking tray. Place the dough with the baking paper upside down on a surface and carefully peel off the baking paper. Turn the dough over and place it back on the baking paper. Top the dough as desired, e.g. with passata, oregano, salt and pepper, cheese, and toppings of your choice. Brush the edges as well. Bake in the preheated oven for about 10 minutes.
