Pan-fried asparagus

Ingredients for 3 servings:

  • 500 g asparagus, white
  • 3 lemon slices
  • 50 g butter
  • 50 ml water, hot
  • n. B. Salt
  • 1 stock cube
  • 1 tsp sugar

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Peel the asparagus, trim off the woody ends, and place the asparagus spears in a large pan large enough to fit the spears side by side. The pan will need a lid. Distribute the lemon slices evenly over the asparagus. Add the butter to the pan and sprinkle the salt and sugar evenly over the asparagus. Dissolve the broth in the water and pour it into the pan. Cover the pan. Simmer the asparagus over medium heat for about 8 minutes. The asparagus should be tender but still crisp after this time. Tips: Boiled or fried potatoes go well with this dish. Fried or steamed fish is also an ideal accompaniment. Although a classic hollandaise sauce also goes well with it, I prefer the broth from the pan.
