Pancakes with quark and blueberries

Ingredients for 2 servings:

  • 1 egg(s)
  • 70 ml water, hot
  • 25 g sugar
  • 100 g flour
  • 1 tsp baking powder
  • 150 ml milk
  • 1 pinch of salt
  • some berries, (blue)
  • 5 tbsp honey, preferably solid
  • 5 tbsp curd
  • butter

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Suitable as breakfast or main course.

Separate the egg. Whisk the egg yolk with water and sugar. Add the flour and baking powder and mix with the milk until a smooth batter forms. Beat the egg whites with a pinch of salt until stiff peaks form and fold into the batter. Heat a frying pan over medium heat, grease with a little butter, pour some batter into the pan, and when the surface bubbles, flip the pancake. Brush the finished pancake thinly with honey, spread the quark on top, and sprinkle with fresh blueberries.
