Ingredients for 4 servings:
- 1 grapefruit(s)
- 100 g cheese (e.g. Emmental, Gouda)
- 2 small avocados
- 4 tbsp yogurt
- salt and pepper
- 20 g cashew nuts, roasted
- chicory, a few leaves
- Paprika powder, sweet
Instructions
Working time approx. 25 minutes; Total time approx. 25 minutes
Fillet the grapefruit and cut into small pieces. Dice the cheese. Halve the avocados, remove the skins, remove the pits, and also cut into small pieces. Season the yogurt with salt and pepper. Mix the grapefruit, cheese, avocado, and cashews with the yogurt. Arrange the salad on chicory leaves and sprinkle with paprika.
