Broccoli patties with corn and sunflower seeds

Ingredients for 2 servings:

  • 250 g broccoli, fresh
  • 70 g corn
  • 1 carrot(s), optional
  • 20 g sunflower seeds
  • 1 small onion(s)
  • 1 tsp, leveled vegetable broth, instant
  • 1 tbsp cornstarch
  • 20 g wheat bran
  • 3 tbsp soy yogurt (yogurt alternative)
  • some salt
  • some pepper, coarsely ground

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Remove the broccoli florets from the head and chop finely. Peel and finely dice the onion. Place the soy yogurt in a bowl and mix with salt, pepper, vegetable stock, wheat bran, sunflower seeds, and cornstarch mixed with a little water. Mix the broccoli, diced onion, and corn (you can also add a grated carrot if you like) well with the yogurt mixture. Heat the sunflower oil in a pan, add about a heaped tablespoon of the mixture to the pan, press it flat, and fry with the lid closed until golden brown. It’s important to only add the patties to the pan over medium heat, otherwise they’ll quickly turn black. I made this batch for 6 patties. Serve with wholegrain rice, herb sauce, and mixed salad, baked potato and tomato salad with balsamic dressing, or jacket potatoes and braised onions.
