Mandarin quark dream with almond brittle

Ingredients for 12 servings:

  • 500 g low-fat curd cheese
  • 250 g double cream cheese
  • 600 g natural yogurt
  • 100 g sugar
  • 1 packet of vanilla sugar
  • 400 ml whipped cream
  • 1 large can/s of tangerine(s)
  • 4 tbsp butter
  • 100 g sugar
  • 1 packet of vanilla sugar
  • 400 g almond flakes

Instructions

Working time approx. 25 minutes; Rest time approx. 6 hours; Total time approx. 6 hours 25 minutes

Party dessert

Beat the quark with cream cheese and yogurt in a large bowl with a mixer. Add the sugar and vanilla sugar. Whip the cream until stiff peaks form and fold into the quark mixture. Finally, fold in the drained mandarins and chill the cream for at least 6 hours. Melt the butter in a non-stick pan, add the sugar and vanilla sugar, and let it caramelize, stirring constantly so the caramel doesn’t turn dark and bitter. Add the flaked almonds and let them coat the caramel. Once the mixture has cooled slightly, place it in a fine sieve to allow the fat to drain off. Chill! Just before serving, transfer the quark dish to a decorative bowl and sprinkle with the almond brittle. P.S. You can prepare the quark dish in the morning so it has a nice marinade. It tastes even better the next day.
