Zucchini pancakes with mozzarella and bacon

Ingredients for 2 servings:

  • 1 large zucchini
  • 3 eggs, size M
  • 200 g mozzarella, grated
  • 125 g bacon, diced

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

From the oven

Preheat the oven to 180 degrees Celsius. Line a baking sheet with parchment paper. Coarsely grate the zucchini, as if for potato pancakes. Mix well with the mozzarella and eggs. Pour onto the baking sheet and top with the bacon cubes. Bake in the oven for about 30 minutes.
