Spicy okra and tomato vegetables

Ingredients for 1 servings:

  • 300 g okra
  • 150 g tomatoes
  • 1 onion(s)
  • 3 cloves garlic
  • 2 tbsp olive oil
  • 2 tsp curry powder (Vegetable Curry Mix)
  • e.g. vegetable broth or water

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Remove the stems from the okra and the stem ends from the tomatoes. Dice the onion and tomatoes, and finely chop the garlic. Heat the oil, add the vegetables to the pan, and sauté. If the juices aren’t enough, add a little vegetable stock or water. Add the seasoning mix, and if it’s not spicy enough, add more. Cover and simmer for about 15 minutes. Serve with rice. If desired, add a piece of grilled or quickly cooked meat (such as chicken, turkey, pork, or lamb).
