Low-carb coconut-almond-quark balls

Ingredients for 1 servings:

  • 500 g low-fat curd cheese
  • 100 g almonds, peeled, approx. 45 pieces
  • 50 g protein powder (vanilla protein powder)
  • 100 g almonds, ground
  • 60 g desiccated coconut, for the dough
  • 100 g desiccated coconut

Instructions

Working time approx. 30 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 30 minutes

Using a hand mixer, combine low-fat quark, egg white powder, ground almonds, and 60g desiccated coconut until a dough forms. Form small dough balls and place an almond in the center of each. Roll the balls in desiccated coconut. If the dough balls are rather small, you’ll make about 45 balls. Refrigerate the balls for at least 4 hours or overnight. These balls make a great low-carb dessert.
