Zucchini and pepper salad

Ingredients for 4 servings:

  • 3 bell peppers, yellow
  • 3 spring onions
  • 3 zucchinis
  • 3 tbsp oil (safflower oil)
  • 2 tbsp white wine vinegar
  • salt and pepper
  • 1 tsp mustard

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Trim, wash, and deseed the bell peppers, then cut them into thin strips lengthwise. Halve these again. Trim the spring onions and slice them into very thin rings. Trim, wash, and thinly slice the zucchini. Whisk the vinaigrette ingredients in a salad bowl and toss the vegetables in the mixture. Let it marinate for 30 minutes. Serve with a warm baguette.
