Ingredients for 1 servings:

  • 900 g fig(s), fresh
  • 650 g sugar
  • 250 ml water
  • ½ large lemon(s), sliced

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 30 minutes

Wash the figs with cold water. Place them in a larger bowl, cover with plenty of water, and let stand for 20 minutes. In a larger saucepan, mix the sugar with the 250 ml water and bring to a boil, stirring with a wooden spoon. Once the syrup has boiled, reduce the heat and simmer gently for 10 minutes. Remove the figs from the water and add to the syrup. Slice half a lemon and add it. Bring to a boil, then simmer on low heat for 30 minutes, stirring occasionally. Remove from the heat and puree finely with a hand blender. Then immediately, while still hot, fill into sterilized screw-top jars and seal. I made 5 150 ml jars.
