Vegetarian eggplant burger

Ingredients for 2 servings:

  • 2 rolls
  • 1 eggplant(s)
  • 1 egg(s)
  • arugula
  • 1 tomato(s)
  • 1 yogurt
  • 1 tbsp mayonnaise
  • 1 tsp harissa
  • 1 garlic clove(s), squeezed
  • Salt

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Cut the eggplant into slices about 1 cm thick. Crack the egg into a deep plate and whisk. Dip the eggplant slices into the eggplant. Then fry the slices in a pan with plenty of hot oil. Meanwhile, mix the yogurt, mayonnaise, harissa, and crushed garlic sauce. Season with salt and then spread it on the buns. Finally, layer the eggplant, arugula, and tomato slices to make a burger. Serve with potatoes, for example, fried in the remaining oil from the eggplant.
