Cinnamon parfait with plum sauce

Ingredients for 4 servings:

  • 5 egg yolks
  • 100 g sugar
  • 1 packet of vanilla sugar
  • 400 g cream
  • 2 tbsp cinnamon
  • 200 g plum(s) (prunes), preserved, drained

It’s best to prepare this dessert a day in advance. In a mixing bowl, beat the egg yolks with the sugar and vanilla sugar until fluffy. In another mixing bowl, whip the cream mixed with the cinnamon until stiff peaks. Now fold the cream into the egg yolk and sugar mixture. Pour the parfait mixture into a flatter rectangular dish and freeze overnight. Choose two nice-looking plums per person and puree the remaining plums (without the juice) into a mousse. Remove the cinnamon parfait from the freezer about three minutes before serving (let it thaw only slightly) and cut into slices. Spoon a portion of plum sauce onto each dessert plate and, if desired, draw a nice pattern into it with a wooden skewer. Then add one or two slices of parfait and place the two reserved plums on top.
